The region was only allowed to grow Pinot Noir from 2003 but Carlos Campolargo has produced a stunning sparkling. It has delicate bubbles, with hints of cherry fruits and biscuit, whilst having complexity and elegance. It is great as an aperitif or with fish and shellfish, at anytime even with dessert. Serve chilled.
