Quinta Dos Castelares: Colheita Red
Grown in stony schist soil at an altitude of 550 meters on north-east facing hills. The wine making process is hand-harvested grapes, full de-stemming and immediately crushed. The grapes are fermented by a variety and by blends to make a rigorous selection process to give the best blend. Fermentation in stainless steel vats of a small capacity with temperatures around 28c. Controls and smooth macerations are essential to get an elegant and aromatic wine. It has notes of rock, rose and spices as well as subtle floral hints. Very complex but elegant with fine and smooth tannins which makes it a good food wine. It goes well with red meats, roasted game and intense cheeses.
